      What is a mescal pit?

      From a distance it is essentially a large clump of dirt and sand, but within the top part is a hole that is covered with wooden planks. The pit is traditionally used for cooking purposes but at the zoo it allowed me to wander off and get a couple of photos of the rear section of the Bobcat and Cougar exhibits.

      Amigos, mezcal is a variety of tequila made from agave that traditional dictates be stored in wooden barrels for six months in a cool place. As the saying goes, PARA TODO MAL MEZCAL, PARA TODO BIEN TAMBIEN. For every ill, mezcal, for every good as well. The pit may also be for elaborating the mezcal. see the wikipedia article on mezcal and taste a good Anejo de Oaxaca. Salud.
