In my opinion Parco Natura Viva and Zoom Torino
But also La Torbiera, Le Cornelle, Oasi di Sant'Alessio, Parco Zoo Punta Verde, Zoo di Pistoia, Parco Zoo Falconara and Bioparco di Roma, also Zoo di Napoli is rising after many bad years

I’m wondering, what is the rarest animal found in Italian zoos, I’m pretty sure there are more rare species in European zoos, but I doubt that at the same time.

The second part of your paragraph is very confusing. Are you referring to Italien zoos compared to other European nations, or are you referring to Europe as a whole? If it was the second one, then yes Europe has many rarities.
